🥩 Garlic Butter Steak Bites with White Wine
Ingredients
- 1½ lbs sirloin steak (or ribeye), cut into 1-inch cubes
- Salt & freshly cracked black pepper
- 1 tablespoon olive oil
- 3 tablespoons unsalted butter (divided)
- 4–5 cloves garlic, minced
- ½ teaspoon dried thyme (or 1 teaspoon fresh)
- ½ cup dry white wine (like Sauvignon Blanc or Pinot Grigio)
- 1 tablespoon chopped fresh parsley (optional)
Instructions
1️⃣ Prep the steak
- Pat steak cubes very dry with paper towels (important for a good sear).
- Season generously with salt and pepper.
2️⃣ Sear
- Heat a large skillet (cast iron works best) over medium-high heat.
- Add olive oil.
- Add steak in a single layer (work in batches if needed).
- Sear 1–2 minutes per side until browned.
- Remove steak from pan and set aside.
3️⃣ Garlic butter & wine sauce
- Reduce heat to medium.
- Add 2 tablespoons butter to the same pan.
- Stir in garlic and thyme. Cook about 30 seconds (don’t burn garlic).
- Pour in white wine and scrape up the browned bits (that’s flavor!).
- Let wine simmer 2–3 minutes until slightly reduced.
4️⃣ Finish
- Return steak bites to the pan.
- Add remaining 1 tablespoon butter.
- Toss 1–2 minutes until steak is coated and cooked to your preferred doneness.
5️⃣ Garnish & serve
- Sprinkle with fresh parsley.
- Serve immediately.
