For the chicken:

  • 2 large chicken breasts (or 4 small)
  • 2 tbsp olive oil
  • 3 cloves garlic (minced)
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp paprika
  • Salt & black pepper (to taste)
  • Juice of 1/2 lemon

For the veggies:

  • 300g baby potatoes (halved)
  • 200g green beans (trimmed)
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • Salt & pepper

  1. Preheat oven
    Set to 200ยฐC (400ยฐF).
  2. Season chicken
    In a bowl, mix olive oil, garlic, thyme, rosemary, paprika, salt, pepper, and lemon juice.
    Coat the chicken well and let it sit for 10โ€“15 minutes (optional but better flavor).
  3. Prep potatoes
    Toss baby potatoes with olive oil, salt, pepper, and garlic powder.
  4. Start baking potatoes first
    Spread potatoes on a tray and bake for 15 minutes (they take longer than chicken).
  5. Add chicken & beans
    • Remove tray from oven
    • Add chicken breasts
    • Add green beans (lightly tossed in oil + seasoning)
  6. Bake everything together
    Return to oven for 20โ€“25 minutes, until:
    • Chicken is fully cooked (juicy inside)
    • Potatoes are golden and crispy
  7. Optional finishing touch
    Broil for 2โ€“3 minutes for extra golden color ๐Ÿ”ฅ

  • Slice chicken and serve with roasted potatoes & green beans
