🧾 Ingredients

  • 3 medium zucchini, sliced into thin rounds or half-moons
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 4 oz cream cheese, softened
  • ½ cup sour cream
  • 4 slices bacon, cooked and crumbled
  • 2 cloves garlic, minced
  • 2 tbsp green onions or chives, sliced
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika (optional)
  • 1 tbsp olive oil or butter
  • Optional topping: extra cheese or bacon

👩‍🍳 Instructions

  1. Preheat oven
    Preheat your oven to 375°F (190°C). Grease an 8×8-inch baking dish.
  2. Cook zucchini
    Heat olive oil or butter in a large skillet over medium heat.
    Add zucchini and cook for 5–7 minutes, stirring occasionally, until just tender and excess moisture cooks off.
    Add garlic and cook for 30 seconds. Remove from heat.
  3. Make creamy mixture
    In a large bowl, mix:
    • Cream cheese
    • Sour cream
    • Salt, pepper, paprika
      Stir until smooth.
  4. Combine
    Add cooked zucchini, cheddar, mozzarella, and ¾ of the bacon to the bowl.
    Mix until well combined.
  5. Bake
    Transfer mixture to prepared baking dish.
    Top with remaining bacon and extra cheese if desired.
    Bake uncovered for 25–30 minutes, until bubbly and lightly golden.
  6. Garnish & serve
    Sprinkle with green onions or chives.
    Let rest 5 minutes before serving.
