🧾 Ingredients

  • ½ cup unsalted butter, softened
  • ⅔ cup powdered erythritol or monk fruit sweetener
  • 1 large egg
  • 1 tsp vanilla extract
  • 1½ cups almond flour
  • ¼ tsp baking powder
  • ¼ tsp salt
  • ½ cup chopped pecans (toasted for best flavor)
  • Optional: 1 tbsp heavy cream (extra softness)

  1. Preheat oven
    Preheat to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream butter & sweetener
    Beat butter and powdered sweetener until light and fluffy.
  3. Add wet ingredients
    Mix in egg and vanilla until fully combined.
  4. Mix dry ingredients
    In a separate bowl, whisk almond flour, baking powder, and salt.
  5. Combine
    Add dry ingredients to wet mixture and mix until dough forms.
    Fold in chopped pecans.
  6. Shape cookies
    Scoop dough (about 1½ tbsp each), place on baking sheet, and gently flatten.
  7. Bake
    Bake 12–15 minutes, until edges are golden.
  8. Cool
    Let cookies cool 10 minutes on the pan—they firm up as they cool.
