For the chicken:
- 2 large chicken breasts (or 4 small)
- 2 tbsp olive oil
- 3 cloves garlic (minced)
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp paprika
- Salt & black pepper (to taste)
- Juice of 1/2 lemon
For the veggies:
- 300g baby potatoes (halved)
- 200g green beans (trimmed)
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- Salt & pepper

- Preheat oven
Set to 200ยฐC (400ยฐF). - Season chicken
In a bowl, mix olive oil, garlic, thyme, rosemary, paprika, salt, pepper, and lemon juice.
Coat the chicken well and let it sit for 10โ15 minutes (optional but better flavor). - Prep potatoes
Toss baby potatoes with olive oil, salt, pepper, and garlic powder. - Start baking potatoes first
Spread potatoes on a tray and bake for 15 minutes (they take longer than chicken). - Add chicken & beans
- Remove tray from oven
- Add chicken breasts
- Add green beans (lightly tossed in oil + seasoning)
- Bake everything together
Return to oven for 20โ25 minutes, until:- Chicken is fully cooked (juicy inside)
- Potatoes are golden and crispy
- Optional finishing touch
Broil for 2โ3 minutes for extra golden color ๐ฅ

- Slice chicken and serve with roasted potatoes & green beans
- Drizzle leftover pan juices on top for extra flavor
