🫐 Baked Blueberry Cottage Cheese

🧾 Ingredients:

  • 1 cup cottage cheese
  • 2 eggs
  • 3–4 tbsp honey or maple syrup
  • ½ cup fresh or frozen blueberries
  • ½ cup oats (or oat flour for smoother texture)
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • Pinch of salt

👩‍🍳 Instructions:

  1. Preheat oven to 180°C (350°F). Grease a small baking dish.
  2. In a blender, combine:
    • cottage cheese
    • eggs
    • honey
    • oats
    • vanilla
    • baking powder
    • salt
      Blend until smooth.
  3. Pour the mixture into the baking dish.
  4. Gently fold in blueberries (or sprinkle on top).
  5. Bake for 25–30 minutes until set and slightly golden.
  6. Let it cool for 5–10 minutes before serving.
