Simple Apple Egg Cake (Pan or Oven)

Ingredients

  • 2 apples
  • 2 eggs
  • ½ cup sugar (or less if apples are sweet)
  • ½ cup flour
  • 2 tbsp oil or melted butter
  • ½ tsp baking powder (optional but helps it rise)
  • Pinch of salt
  • Optional: cinnamon or vanilla

Instructions

  1. Prep the apples
    • Peel (optional), core, and slice apples thin.
    • Toss with a little sugar and cinnamon if you like.
  2. Mix wet ingredients
    • In a bowl, whisk eggs and sugar until slightly pale.
    • Add oil/butter and vanilla if using.
  3. Add dry ingredients
    • Stir in flour, baking powder, and salt.
    • Mix just until smooth (don’t overmix).
  4. Combine
    • Gently fold in the apples.
  5. Cook
    • Oven: Pour into a greased pan and bake at 180°C / 350°F for 30–35 minutes
    • Stovetop: Cook in a covered non-stick pan on low heat for 25–30 minutes (flip carefully if needed)
  6. Cool & serve
    • Let it cool slightly.
    • Sprinkle sugar on top or serve warm as is.
