Keto Pepperoni Pizza Quesadillas

Ingredients (1 serving)

  • 2 low-carb tortillas (or cheese-based keto tortillas)
  • ½ cup shredded mozzarella cheese
  • 8–12 slices pepperoni
  • 2–3 tbsp low-carb pizza sauce (or sugar-free marinara)
  • 1 tbsp grated parmesan (optional, extra crisp)
  • Italian seasoning or oregano (optional)
  • Olive oil or butter for the pan

Instructions

  1. Heat the pan
    Place a non-stick skillet over medium heat and lightly grease with olive oil or butter.
  2. Build the quesadilla
    • Lay one tortilla in the pan.
    • Sprinkle half the mozzarella evenly.
    • Add pepperoni and a light drizzle of pizza sauce.
    • Sprinkle Italian seasoning and parmesan if using.
    • Add remaining mozzarella and top with the second tortilla.
  3. Cook until crispy
    Cook 2–3 minutes per side, pressing gently, until golden brown and the cheese is fully melted.
  4. Slice & serve
    Remove from pan, slice into wedges, and serve hot.
