Keto Pepperoni Pizza Quesadillas

Ingredients (1 serving)
- 2 low-carb tortillas (or cheese-based keto tortillas)
- ½ cup shredded mozzarella cheese
- 8–12 slices pepperoni
- 2–3 tbsp low-carb pizza sauce (or sugar-free marinara)
- 1 tbsp grated parmesan (optional, extra crisp)
- Italian seasoning or oregano (optional)
- Olive oil or butter for the pan
Instructions
- Heat the pan
Place a non-stick skillet over medium heat and lightly grease with olive oil or butter. - Build the quesadilla
- Lay one tortilla in the pan.
- Sprinkle half the mozzarella evenly.
- Add pepperoni and a light drizzle of pizza sauce.
- Sprinkle Italian seasoning and parmesan if using.
- Add remaining mozzarella and top with the second tortilla.
- Cook until crispy
Cook 2–3 minutes per side, pressing gently, until golden brown and the cheese is fully melted. - Slice & serve
Remove from pan, slice into wedges, and serve hot.
