Ingredients

  • 1 cup all-purpose flour
  • ½ tsp salt
  • ½ tsp paprika (optional, for warmth)
  • ¼ tsp garlic powder (optional)
  • ½ cup cold butter, cubed
  • 1 cup sharp cheddar cheese, finely grated
  • 1–2 tbsp cold water (as needed)
  • 1 egg yolk (for brushing)
  • 2 tbsp sesame seeds (white or mixed)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Make the dough
    • In a bowl, mix flour, salt, paprika, and garlic powder.
    • Rub in the cold butter with fingertips until mixture resembles coarse crumbs.
    • Stir in grated cheese.
    • Add cold water a little at a time until dough just comes together.
  3. Chill
    • Shape dough into a disc, wrap, and chill 20–30 minutes (helps with crispiness).
  4. Roll & cut
    • Roll dough on a lightly floured surface to about ¼ inch thick.
    • Cut into thin strips (about ½ inch wide).
  5. Top
    • Place strips on baking sheet.
    • Brush lightly with egg yolk.
    • Sprinkle generously with sesame seeds.
  6. Bake
    • Bake 12–15 minutes until golden and crisp.
    • Cool on a rack—they crisp up even more as they cool ✨

  • Spicy: add cayenne or chili flakes
  • Herby: mix in thyme or rosemary
  • Extra cheesy: sprinkle Parmesan before baking
  • Everything-style: use everything bagel seasoning instead of sesame
