Banana Bread Batter
- 3 ripe bananas, mashed
- ½ cup (115g) unsalted butter, melted
- ¾ cup (150g) granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp baking soda
- ½ tsp salt
- 1½ cups (190g) all-purpose flour
Cream Cheese Filling
- 8 oz (225g) cream cheese, softened
- ¼ cup (50g) granulated sugar
- 1 large egg
- ½ tsp vanilla extract
🔥 Instructions
- Preheat oven to 350°F (175°C).
Grease and line a 9×5-inch loaf pan with parchment paper. - Make the cream cheese filling:
Beat cream cheese, sugar, egg, and vanilla until smooth. Set aside. - Prepare banana batter:
In a bowl, mix melted butter and mashed bananas.
Stir in sugar, egg, and vanilla.
Add baking soda and salt.
Fold in flour just until combined (don’t overmix). - Assemble:
- Pour half the banana batter into the loaf pan.
- Spread cream cheese mixture evenly over it.
- Top with remaining banana batter and gently smooth.
- Bake for 50–60 minutes, or until a toothpick inserted near the edge comes out clean (avoid the center cream layer when testing).
- Cool completely before slicing for clean layers.
