🧾 Ingredients

  • 2 large chicken breasts, sliced or cubed
  • 1 tbsp olive oil or butter
  • 3 cloves garlic, minced
  • 1½ cups mushrooms, sliced
  • 2 cups fresh spinach
  • ½ cup heavy cream (or coconut cream for dairy-free)
  • ¼ cup chicken broth
  • ¼ cup grated Parmesan (optional but recommended)
  • ½ tsp Italian seasoning
  • Salt & pepper to taste
  • Pinch chili flakes (optional)

🥣 Instructions

  1. Season chicken with salt, pepper, and Italian seasoning.
  2. Heat oil in a skillet over medium-high heat.
  3. Sear chicken 4–5 minutes until golden. Remove and set aside.
  4. In same pan, sauté mushrooms until browned and moisture evaporates.
  5. Add garlic; cook 30 seconds.
  6. Pour in broth and cream; simmer 2–3 minutes.
  7. Stir in Parmesan until thick.
  8. Add spinach; wilt.
  9. Return chicken to pan and simmer 3–5 minutes until cooked through.

🧄 Variations

  • Extra creamy: Add 1 tbsp cream cheese
  • Keto garlic sauce: Add ½ tsp garlic powder + butter
  • Tuscan-style: Add sun-dried tomatoes (small amount)
