🧾 Ingredients
- 2 large chicken breasts, sliced or cubed
- 1 tbsp olive oil or butter
- 3 cloves garlic, minced
- 1½ cups mushrooms, sliced
- 2 cups fresh spinach
- ½ cup heavy cream (or coconut cream for dairy-free)
- ¼ cup chicken broth
- ¼ cup grated Parmesan (optional but recommended)
- ½ tsp Italian seasoning
- Salt & pepper to taste
- Pinch chili flakes (optional)
🥣 Instructions
- Season chicken with salt, pepper, and Italian seasoning.
- Heat oil in a skillet over medium-high heat.
- Sear chicken 4–5 minutes until golden. Remove and set aside.
- In same pan, sauté mushrooms until browned and moisture evaporates.
- Add garlic; cook 30 seconds.
- Pour in broth and cream; simmer 2–3 minutes.
- Stir in Parmesan until thick.
- Add spinach; wilt.
- Return chicken to pan and simmer 3–5 minutes until cooked through.

- Extra creamy: Add 1 tbsp cream cheese
- Keto garlic sauce: Add ½ tsp garlic powder + butter
- Tuscan-style: Add sun-dried tomatoes (small amount)
