🍗 Chicken and Potato Bake

🛒 Ingredients

  • 4–6 chicken thighs or drumsticks (bone-in, skin-on for best flavor)
  • 4–5 medium potatoes, peeled or skin-on, sliced into chunks
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 3 tbsp olive oil
  • 1 tsp paprika (smoked if possible)
  • 1 tsp dried oregano or thyme
  • ½ tsp black pepper
  • 1 tsp salt (adjust to taste)
  • ½ tsp chili flakes (optional)
  • ½ cup chicken stock or water
  • Optional add-ins: carrots, bell peppers, mushrooms

👩‍🍳 Instructions

  1. Preheat oven to 200°C / 400°F.
  2. Prepare potatoes
    Place potatoes and onion in a large baking dish.
    Drizzle with half the olive oil, season with salt and pepper, and toss well.
  3. Season chicken
    In a bowl, mix remaining olive oil, paprika, oregano, garlic, chili flakes, salt, and pepper.
    Rub this mixture all over the chicken.
  4. Assemble
    Place chicken skin-side up on top of the potatoes.
    Pour chicken stock around (not over the chicken).
  5. Bake uncovered
    Bake for 50–60 minutes, turning potatoes once halfway, until:
    • Chicken is golden and crispy
    • Potatoes are tender
    • Juices run clear
  6. Optional crisp boost
    Grill/broil for the last 5 minutes if you want extra crispy skin.

🌿 Serving Ideas

  • Serve with a green salad, steamed veggies, or garlic yogurt sauce
  • Squeeze a little lemon juice over the top before serving for brightness
