🍗 Chicken and Potato Bake

🛒 Ingredients
- 4–6 chicken thighs or drumsticks (bone-in, skin-on for best flavor)
- 4–5 medium potatoes, peeled or skin-on, sliced into chunks
- 1 onion, sliced
- 3 cloves garlic, minced
- 3 tbsp olive oil
- 1 tsp paprika (smoked if possible)
- 1 tsp dried oregano or thyme
- ½ tsp black pepper
- 1 tsp salt (adjust to taste)
- ½ tsp chili flakes (optional)
- ½ cup chicken stock or water
- Optional add-ins: carrots, bell peppers, mushrooms
👩🍳 Instructions
- Preheat oven to 200°C / 400°F.
- Prepare potatoes
Place potatoes and onion in a large baking dish.
Drizzle with half the olive oil, season with salt and pepper, and toss well. - Season chicken
In a bowl, mix remaining olive oil, paprika, oregano, garlic, chili flakes, salt, and pepper.
Rub this mixture all over the chicken. - Assemble
Place chicken skin-side up on top of the potatoes.
Pour chicken stock around (not over the chicken). - Bake uncovered
Bake for 50–60 minutes, turning potatoes once halfway, until:- Chicken is golden and crispy
- Potatoes are tender
- Juices run clear
- Optional crisp boost
Grill/broil for the last 5 minutes if you want extra crispy skin.
