Avocado Bread
Soft • Flavorful • One-Bowl Recipe
Ingredients (1 loaf)
- 1 large ripe avocado (about 1 cup mashed)
- ½ cup sugar (or coconut sugar)
- ¼ cup brown sugar (or honey/maple syrup)
- ¼ cup neutral oil (or melted butter)
- 2 large eggs
- 1 tsp vanilla extract
- 1½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 tsp cinnamon (optional)
- ½ cup chopped nuts or chocolate chips (optional)
Instructions
- Preheat oven
Preheat to 350°F (175°C). Grease or line a 9×5-inch loaf pan. - Mix wet ingredients
In a large bowl, mash the avocado until smooth.
Whisk in sugars, oil, eggs, and vanilla. - Add dry ingredients
Stir in flour, baking soda, baking powder, salt, and cinnamon just until combined.
Fold in nuts or chocolate chips if using. - Bake
Pour batter into pan and smooth the top.
Bake 50–60 minutes, or until a toothpick inserted comes out clean. - Cool & serve
Cool in pan 10 minutes, then transfer to a rack.
Tips & Variations
- Healthier swap: Use half whole wheat flour
- Lime twist: Add 1 tsp lime zest
- Vegan: Replace eggs with 2 flax eggs
- Low-sugar: Reduce sugar by ¼ cup without affecting texture
