Think pizza meets zucchini slice meets baked oatmeal.

🧾 Ingredients

  • 2 cups grated zucchini (squeezed dry)
  • 1 cup rolled oats
  • 2 eggs
  • 1 cup shredded mozzarella
  • ¼ cup grated Parmesan
  • ½ cup pizza sauce
  • ½ tsp garlic powder
  • ½ tsp dried oregano
  • ¼ tsp black pepper
  • Optional toppings: sliced olives, mushrooms, bell peppers, turkey pepperoni, fresh basil

🔥 Instructions

  1. Preheat oven to 375°F (190°C).
    Line or grease an 8×8 baking dish.
  2. Prep zucchini:
    After grating, squeeze out excess moisture using a towel (very important!).
  3. Mix base:
    In a bowl, combine zucchini, oats, eggs, mozzarella, Parmesan, and seasonings.
  4. Press & layer:
    Press mixture evenly into baking dish.
    Spread pizza sauce over the top.
    Add extra cheese and toppings if desired.
  5. Bake 25–30 minutes until golden and set.
  6. Optional crisp finish:
    Broil 2–3 minutes for a bubbly, golden top.
  7. Cool 5–10 minutes, then slice like pizza squares.
