- Heat oil in a skillet over medium heat.

Add garlic and ginger. Cook 30 seconds until fragrant. - Cook chicken
Add ground chicken. Break it up and cook until no longer pink (5β7 min). - Add vegetables
Stir in mushrooms and carrots. Cook 3β4 minutes until softened. - Add sauce
Pour in soy sauce, rice vinegar, sesame oil, sweetener (if using), and chili.
Stir well and cook 2 more minutes. - Finish
Add green onions. Taste and adjust seasoning. - Serve
