🧄🧀 Garlic Parmesan Chicken Meatloaf
Ingredients
For the meatloaf:
- 1½ lbs ground chicken
- ¾ cup grated Parmesan cheese
- ½ cup Italian breadcrumbs
- 1 large egg
- ⅓ cup milk
- 3–4 cloves garlic, minced
- ½ small onion, finely diced
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons chopped fresh parsley (optional)
- 1 tablespoon olive oil
Optional cheesy topping:
- ½ cup shredded mozzarella
- 2 tablespoons grated Parmesan
- 1 tablespoon melted butter
Instructions
1️⃣ Preheat
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
2️⃣ Mix gently
In a large bowl, combine ground chicken, Parmesan, breadcrumbs, egg, milk, garlic, onion, seasoning, salt, pepper, parsley, and olive oil.
Mix just until combined — don’t overmix (ground chicken can get dense).
3️⃣ Shape
Form into a loaf shape (about 8×4 inches) on the baking sheet, or press into a loaf pan.
4️⃣ Bake
Bake for 35–45 minutes, until internal temperature reaches 165°F (74°C).
5️⃣ Add topping (optional but recommended)
Sprinkle mozzarella and Parmesan on top, drizzle with melted butter, and return to oven for 5–7 minutes until melted and lightly golden.
6️⃣ Rest
Let rest 10 minutes before slicing to keep juices inside.

- Ground chicken breast is lean — adding olive oil and milk keeps it tender.
- You can sauté the onions first for sweeter flavor.
- If mixture feels too wet, add 1–2 tablespoons more breadcrumbs.
