- 3 tablespoons chia seeds
- 1 cup coconut milk (full-fat for creamier texture, or light if preferred)
- 1β2 teaspoons honey or maple syrup (optional)
- ΒΌ teaspoon vanilla extract (optional)
- Pinch of salt

- Mix β In a bowl or jar, whisk together coconut milk, sweetener, vanilla, and salt.
- Add chia seeds β Stir in chia seeds and mix well to avoid clumping.
- Rest & stir again β Let it sit for 5β10 minutes, then stir again to prevent seeds from settling.
- Refrigerate β Cover and chill for at least 3β4 hours, or overnight.
- Serve β Stir before serving and add your favorite toppings.
