🥜 Mediterranean No-Bake Peanut Butter Oat Energy Balls

🧾 Ingredients (Makes ~14–16 balls)

  • 1 cup rolled oats
  • ½ cup natural peanut butter
  • ¼ cup honey or date syrup
  • ¼ cup finely chopped Medjool dates
  • 2 tbsp chia seeds
  • 2 tbsp ground flaxseed
  • 2 tbsp chopped pistachios or almonds
  • 1–2 tbsp warm water (if needed for binding)
  • Optional: pinch cinnamon + sea salt

🥣 Instructions

1️⃣ Mix Dry Ingredients
In a bowl, combine oats, chia seeds, flaxseed, nuts, and cinnamon.

2️⃣ Add Wet Ingredients
Stir in peanut butter, honey (or date syrup), and chopped dates.

3️⃣ Adjust Texture
If mixture feels too dry, add 1 tablespoon warm water at a time until it holds together.

4️⃣ Roll
Scoop about 1 tablespoon of mixture and roll into balls.

5️⃣ Chill
Refrigerate for at least 20–30 minutes to firm up.

Store in an airtight container in the fridge up to 1 week.
