🥒🧀 A Twist on Oatmeal and Zucchini – Better Than Pizza
Think pizza meets zucchini slice meets baked oatmeal.
🧾 Ingredients
- 2 cups grated zucchini (squeezed dry)
- 1 cup rolled oats
- 2 eggs
- 1 cup shredded mozzarella
- ¼ cup grated Parmesan
- ½ cup pizza sauce
- ½ tsp garlic powder
- ½ tsp dried oregano
- ¼ tsp black pepper
- Optional toppings: sliced olives, mushrooms, bell peppers, turkey pepperoni, fresh basil
🔥 Instructions
- Preheat oven to 375°F (190°C).
Line or grease an 8×8 baking dish. - Prep zucchini:
After grating, squeeze out excess moisture using a towel (very important!). - Mix base:
In a bowl, combine zucchini, oats, eggs, mozzarella, Parmesan, and seasonings. - Press & layer:
Press mixture evenly into baking dish.
Spread pizza sauce over the top.
Add extra cheese and toppings if desired. - Bake 25–30 minutes until golden and set.
- Optional crisp finish:
Broil 2–3 minutes for a bubbly, golden top. - Cool 5–10 minutes, then slice like pizza squares.
