Avocado Bread

Soft • Flavorful • One-Bowl Recipe

Ingredients (1 loaf)

  • 1 large ripe avocado (about 1 cup mashed)
  • ½ cup sugar (or coconut sugar)
  • ¼ cup brown sugar (or honey/maple syrup)
  • ¼ cup neutral oil (or melted butter)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp cinnamon (optional)
  • ½ cup chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat oven
    Preheat to 350°F (175°C). Grease or line a 9×5-inch loaf pan.
  2. Mix wet ingredients
    In a large bowl, mash the avocado until smooth.
    Whisk in sugars, oil, eggs, and vanilla.
  3. Add dry ingredients
    Stir in flour, baking soda, baking powder, salt, and cinnamon just until combined.
    Fold in nuts or chocolate chips if using.
  4. Bake
    Pour batter into pan and smooth the top.
    Bake 50–60 minutes, or until a toothpick inserted comes out clean.
  5. Cool & serve
    Cool in pan 10 minutes, then transfer to a rack.

Tips & Variations

  • Healthier swap: Use half whole wheat flour
  • Lime twist: Add 1 tsp lime zest
  • Vegan: Replace eggs with 2 flax eggs
  • Low-sugar: Reduce sugar by ¼ cup without affecting texture
