🥩 Garlic Butter Steak Bites with White Wine

Ingredients

  • 1½ lbs sirloin steak (or ribeye), cut into 1-inch cubes
  • Salt & freshly cracked black pepper
  • 1 tablespoon olive oil
  • 3 tablespoons unsalted butter (divided)
  • 4–5 cloves garlic, minced
  • ½ teaspoon dried thyme (or 1 teaspoon fresh)
  • ½ cup dry white wine (like Sauvignon Blanc or Pinot Grigio)
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

1️⃣ Prep the steak

  • Pat steak cubes very dry with paper towels (important for a good sear).
  • Season generously with salt and pepper.

2️⃣ Sear

  • Heat a large skillet (cast iron works best) over medium-high heat.
  • Add olive oil.
  • Add steak in a single layer (work in batches if needed).
  • Sear 1–2 minutes per side until browned.
  • Remove steak from pan and set aside.

3️⃣ Garlic butter & wine sauce

  • Reduce heat to medium.
  • Add 2 tablespoons butter to the same pan.
  • Stir in garlic and thyme. Cook about 30 seconds (don’t burn garlic).
  • Pour in white wine and scrape up the browned bits (that’s flavor!).
  • Let wine simmer 2–3 minutes until slightly reduced.

4️⃣ Finish

  • Return steak bites to the pan.
  • Add remaining 1 tablespoon butter.
  • Toss 1–2 minutes until steak is coated and cooked to your preferred doneness.

5️⃣ Garnish & serve

  • Sprinkle with fresh parsley.
  • Serve immediately.
