🛒 Dough Ingredients (Fathead Style)
- 1 ½ cups shredded mozzarella
- 2 oz cream cheese
- 1 cup almond flour
- 1 large egg
- ½ teaspoon baking powder
- Pinch of salt
🥩 Filling Ingredients (Savory Beef)
- 1 tablespoon olive oil
- ½ small onion, finely diced
- 1 clove garlic, minced
- ½ lb ground beef
- ½ teaspoon cumin
- ½ teaspoon paprika
- Salt & pepper to taste
- 1 tablespoon tomato paste
- Optional: chopped olives or hard-boiled egg pieces
👩🍳 Instructions
1️⃣ Make the Filling
- Heat olive oil in a skillet over medium heat.
- Sauté onion and garlic until soft.
- Add ground beef and cook until browned.
- Stir in cumin, paprika, salt, pepper, and tomato paste.
- Cook 2–3 more minutes.
- Remove from heat and let cool.
2️⃣ Prepare the Dough
- In a microwave-safe bowl, melt mozzarella and cream cheese (about 60–90 seconds, stirring halfway).
- Stir until smooth.
- Add almond flour, egg, baking powder, and salt.
- Mix until a soft dough forms (knead gently if needed).
3️⃣ Assemble
- Preheat oven to 375°F (190°C).
- Place dough between two sheets of parchment paper and roll to about ¼-inch thick.
- Cut into circles (4–5 inches wide).
- Add 1–2 tablespoons filling to one side of each circle.
- Fold over and seal edges with a fork.
4️⃣ Bake
- Place on lined baking sheet.
- Optional: brush tops with beaten egg for golden color.
- Bake 15–20 minutes until golden brown.
