🛒 Dough Ingredients (Fathead Style)

  • 1 ½ cups shredded mozzarella
  • 2 oz cream cheese
  • 1 cup almond flour
  • 1 large egg
  • ½ teaspoon baking powder
  • Pinch of salt

🥩 Filling Ingredients (Savory Beef)

  • 1 tablespoon olive oil
  • ½ small onion, finely diced
  • 1 clove garlic, minced
  • ½ lb ground beef
  • ½ teaspoon cumin
  • ½ teaspoon paprika
  • Salt & pepper to taste
  • 1 tablespoon tomato paste
  • Optional: chopped olives or hard-boiled egg pieces

👩‍🍳 Instructions

1️⃣ Make the Filling

  1. Heat olive oil in a skillet over medium heat.
  2. Sauté onion and garlic until soft.
  3. Add ground beef and cook until browned.
  4. Stir in cumin, paprika, salt, pepper, and tomato paste.
  5. Cook 2–3 more minutes.
  6. Remove from heat and let cool.

2️⃣ Prepare the Dough

  1. In a microwave-safe bowl, melt mozzarella and cream cheese (about 60–90 seconds, stirring halfway).
  2. Stir until smooth.
  3. Add almond flour, egg, baking powder, and salt.
  4. Mix until a soft dough forms (knead gently if needed).

3️⃣ Assemble

  1. Preheat oven to 375°F (190°C).
  2. Place dough between two sheets of parchment paper and roll to about ¼-inch thick.
  3. Cut into circles (4–5 inches wide).
  4. Add 1–2 tablespoons filling to one side of each circle.
  5. Fold over and seal edges with a fork.

4️⃣ Bake

  • Place on lined baking sheet.
  • Optional: brush tops with beaten egg for golden color.
  • Bake 15–20 minutes until golden brown.

  • 🍗 Shredded chicken with taco seasoning
  • 🌶 Add chili flakes for heat
  • Air fryer: 350°F for 8–10 minutes
