🥒 Zucchini Patties (Seriously Addictive)

Ingredients

  • 2 medium zucchini, grated
  • 1 tsp salt (for draining)
  • 1 egg
  • ½ cup grated cheese (Parmesan or feta = 🔥)
  • ⅓ cup breadcrumbs or oat flour
  • 2 tbsp finely chopped onion or scallions
  • 1–2 cloves garlic, minced
  • Black pepper + paprika (or chili flakes if you like heat)
  • Fresh herbs (dill, parsley, or basil—optional but great)
  • Olive oil for frying

How

  1. Grate zucchini, toss with salt, and let sit 10 min.
  2. Squeeze the life out of it (clean towel or hands). This is the secret to crisp patties.
  3. Mix zucchini with egg, cheese, breadcrumbs, onion, garlic, spices, and herbs.
  4. Form small patties.
  5. Pan-fry in olive oil over medium heat, ~3–4 min per side until golden.
