Ingredients
- 2 medium zucchini, grated
- 1 tsp salt (for draining)
- 1 egg
- ½ cup grated cheese (Parmesan or feta = 🔥)
- ⅓ cup breadcrumbs or oat flour
- 2 tbsp finely chopped onion or scallions
- 1–2 cloves garlic, minced
- Black pepper + paprika (or chili flakes if you like heat)

- Olive oil for frying
How
- Grate zucchini, toss with salt, and let sit 10 min.
- Squeeze the life out of it (clean towel or hands). This is the secret to crisp patties.
- Mix zucchini with egg, cheese, breadcrumbs, onion, garlic, spices, and herbs.
- Form small patties.
- Pan-fry in olive oil over medium heat, ~3–4 min per side until golden.
