🍤 Creamy Tuscan Butter Shrimp

🧾 Ingredients

  • 500 g shrimp (peeled & deveined)
  • Salt & black pepper (to taste)
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 4–5 garlic cloves, minced
  • ½ cup sun-dried tomatoes (chopped)
  • 1 cup heavy cream
  • ½ cup chicken broth (or water)
  • ½ cup parmesan cheese (grated)
  • 1 tsp Italian seasoning
  • ½ tsp paprika or chili flakes (optional)
  • 1–2 cups baby spinach
  • Fresh basil or parsley (optional)

👩‍🍳 Instructions

1️⃣ Cook the shrimp

  1. Season shrimp with salt & pepper.
  2. Heat olive oil in a pan over medium-high heat.
  3. Sear shrimp 1–2 minutes per side until pink.
  4. Remove shrimp and set aside.

2️⃣ Make the Tuscan sauce

  1. In the same pan, melt butter.
  2. Add garlic, sauté 30 seconds (don’t brown).
  3. Add sun-dried tomatoes and cook 1 minute.
  4. Pour in chicken broth, simmer 2 minutes.
  5. Add cream, Italian seasoning, paprika/chili.
  6. Simmer on low heat for 5 minutes until slightly thick.

3️⃣ Finish

  1. Stir in parmesan until melted.
  2. Add spinach and let it wilt.
  3. Return shrimp to pan.
  4. Simmer 2–3 minutes until shrimp is coated and tender.
  5. Taste and adjust salt.

🍽 Serving Ideas

  • Over pasta or fettuccine
  • With rice or mashed potatoes
  • With crusty bread (don’t skip this)

🌟 Tips & Variations

  • Swap shrimp with chicken or salmon.
  • For lighter sauce: use half cream + half milk.
  • For extra richness: add 1 tbsp cream cheese.
