Ingredients
- 1 lb ground beef (or ground turkey)
- 1 packet taco seasoning
- 1 can (10โ10.5 oz) Rotel (diced tomatoes w/ green chiles), undrained
- 1 can (15 oz) corn, drained
- 1 can (15 oz) black beans, drained & rinsed (optional but good)
- 1 can (10.5 oz) cream of chicken or cream of mushroom soup
- 1 cup sour cream
- 2 cups shredded Mexican-blend cheese (plus extra for topping)
- 1 bag (9โ11 oz) crushed tortilla chips or Nacho Cheese Doritos ๐ฅ
- Optional: diced jalapeรฑos, green onions, olives
Instructions
- Brown the meat in a skillet over medium heat. Drain excess grease.
- Season it up: Add taco seasoning + a splash of water. Simmer 2โ3 min.
- Mix the magic:
In a big bowl, combine:- Cooked meat
- Rotel
- Corn
- Black beans
- Cream soup
- Sour cream
- 1ยฝ cups cheese
- Layer it:
- Grease a 9×13 baking dish
- Spread half the crushed chips
- Add the casserole mixture
- Top with remaining chips + extra cheese
- Bake at 375ยฐF / 190ยฐC for 30โ35 minutes, until bubbly and golden.
- Rest 5 minutes, then absolutely destroy it.
